Almond Apricot Chicken Salad

This protein and fiber packed chicken salad is so easy to make and so fun to eat nestled in the pocket of a pita.

Almond Apricot Chicken Salad

Serves 2. Double or halve the recipe as desired or store leftover prepared chicken salad in the fridge and assemble the pita pockets as you’re ready to eat them.

1/4 cup almonds, chopped
1/2 cup dried apricots, chopped
1 cup cooked chicken, chopped
1/2 cup plain yogurt
1 tbsp dijon mustard
1 tsp honey
2 pitas
lettuce

Mix almonds, apricots, chicken, yogurt, mustard, and honey in a bowl. Warm pitas in the oven. Cut pitas in half and carefully open their pockets. Line one side of the pocket with lettuce and then spoon in about 1/2 cup prepared chicken salad per pocket.
